Baked Beans and Apple

This recipe for Baked Beans and Apple looks weird at first, but it actually tastes great and it’s healthy!

Ingredients:
1 medium apple, peeled, cored and sliced
1/2 cup chopped onion
1 14oz can of pork and beans in tomato sauce
1 tbsp ketchup
1 tsp prepared mustard
pinch or two of cinnamon
2 tbsp raisins (optional)

Directions:
In a small saucepan, bring small amount of water to boil, then add chopped onion and apple. Boil for 5 minutes, then drain. In a bowl, combine, cooked apple and onion with remaining ingredients. Pour into a small casserole dish and bake for 45 minutes at 350F. Stir halfway through baking.

This recipe is great for a healthy sidedish and it’s easy to pack and reheat for lunches. I was skeptical about making it at first, but in the end it tasted great. If you plan on making it for your family, you may want to double the ingredients and make 8 servings instead of 4.
